Anyway it would be hard to balance PvP in this game. For proper pvp your enemy would have to have same amount of stats used, same lvl or similiar and similiar weapon, otherwise you could kill everyone with 1 hit.

Pretty much. There are MMOs that have separate status of skills from PvE - take Dragon Nest for example: all skill stats have a "PvP" stat description that is typically much lower in effectiveness and the pvp in there can be equalized.

While Onigiri isn't too different from Dragon Nest in terms of gameplay, I'm sure the pvp for it can be balanced if they actually put in the effort. The PvP mode for this game seems to be a point-and-click MOBA using the same engine, and wow, talk about playing all your cards, 'cause MOBAs are VERY difficult to fully balance.

Dueling is a one on one fight between two players and belongs in the PVP category.
PVP is a general term for players fighting against other players and thus can encompass a number of different modes for players to fight against such as guild vs. guild and such beyond just two people fighting on a one on one match.
