If you sided with Ieyasu and finished the sekigahara story, then you can talk to the mirror that is next to him to replay the dungeon whenever you want.

So i sided with mitsunari, finished the quests, after that, i went to the east camp, but leyasu wasn't there anymore, no more NPCs.

You need to enter the east camp from Nether Sekigahara.
