If you equipped defence boosting magatama; rip that shit off and swap it for the relevant skill force magatama for the weapons you use. Boosting defence in this game is about as useful as a chocolate kettle. Actually, you can eat a chocolate kettle, so that'd be more useful than boosting defence. Mobs and bosses around the Repair Benkai quest are already capable of one-shotting you if you're really unlucky and/or suck at guarding. I've heard that after Kaga, monsters suddenly get insanely powerful.
In order to pull off a POW/VIT hybrid, you're going to need to overlevel a bit so that you can keep up with specialists in terms of affinity. Because you'll have more than one weapon, you'll need sf mags for both (otherwise you'll have to switch mags every time you switch weapons), which means your skill force is going to be lower than that of specialists too. There are *some* hybrid mags, but high chakra costs mean you can't equip as many. I'd recommend having a good NPC partner and a good youkai with you at all times. I'd recommend Kijimuna Maiden/Empress. The only NPC partners available at the moment (as far as I'm aware) are Izuna and Gennai. I prefer Izuna, but I'm a Lolicon so go figure. Musashi is generally regarded as being the best, but she's no longer available, although I've heard another version of her is coming soon so maybe hold out for her.
I've just noticed you only mentioned levelling stats and not weapons. If you're just using one type of weapon (ie swords) then you're not boned just yet. When you finish Repairing Benkei, you get a Stat Point Reset. Use that to max out POW (assuming you're using Sword/Odachi/Axe) and then put some points into MND (For chaining skills) and DEX (for cooldown cut, crit and a little extra attack).
I run hybrids as well as specialists, and so far it hasn't bitten me on the arse. Then again, my main is Level 89 and hasn't been to Kaga yet. Heavily overlevelled, but so far not screwed. That may change around Echigo, from what I've heard.
TL;DR No. Anything you've done can still be fixed, unless you used the Stat Point Reset, in which case you might be fucked. You'd have to buy another to fix it.
